Okay, nuts are good for you. No, not those kind of nuts! What kind of dirty mind do you have! I am talking about almonds, pecans, walnuts, those kinds of nuts. Nuts have a tremendous amount of research to back them up as to why they are healthy, so I won’t go into detail right now about that. Maybe when I update later, I will add some FDA approved facts to inspire you. For now, I am going to share with you one of my favorite recipes that I created myself in my kitchen. It is a yummy and great way to get nuts into your diet. I like to take this in my lunches to work for a protein filled snack.
GOURMET ALMOND SHORT-CAKE
3/4 cup almond meal (can buy already ground)
1/4 cup pecans
1/4 cups walnuts
4-5 pieces graham crackers (or oatmeal cookies)
1/4 cup sugar
Preheat oven to 350 degrees.
Using a large, strong ziploc bag, crush the pecans, walnuts and graham crackers to bit pieces.
You can also use a food processor to do this.
In a large mixing bowl, mix together all of the ingredients.
Grease a glass pie pan with olive oil.
Add the short-cake mix and spread evenly into the pie pan.
Bake for 20 to 25 minutes.
Let cool to room temperature.
Serve plain or with fruit topping such as blueberries or strawberries.
