How To Make Eggnog And Other Eggnog Recipes

Eggnog is a delicious nutritious egg and milk drink, easily made at home. It contains sugar and is flavored with vanilla, fruit juice, chocolate, or wine. Brandy, whiskey, or rum may be used according to taste. A basic recipe follows:

1 egg, beaten

2 tsp sugar or honey

1 cup vitamin D milk

1/2 tsp vanilla

Dash of nutmeg

Beat the egg and the sugar together; the beat in the milk and vanilla. Serve cold using tall glasses with a light sprinkling of nutmeg. Omit the vanilla if other flavoring is used.  To make a fluffier lighter eggnog, beat the yolk and white separately. Add the sugar, milk, and flavoring to the yolk, and fold in the white. This recipe serves one; to serve more just double or triple the recipe.

Christmas eggnog

6 eggs

1/2 cup sugar

3/4 cup rye whiskey

1/3 cup jamaica rum

1 cup whipped cream

Beat the egg yolks until thick and the color of lemons, then add the whiskey and rum, a tablespoon at a time, beating constantly. Beat the egg whites until stiff, but not dry, and add gradually all but one tablespoon of sugar. Combine the two mixtures. Add the remaining sugar to the whipped cream, and fold it into the eggnog, reserving two tablespoons of cream. Serve in punch glasses, topping it with the remaining whipped cream and dusting each serving with grated nutmeg. ( serves 10 )

Cider eggnog

1 egg

1/2 tsp powdered sugar

3 ice cubes

1 tumbler cider

Combine the egg, sugar, and ice cubes. Place these ingredients in a large tumbler and fill with cider. Shake vigorously. ( serves 1 )

Eggnog sauce

2 cups light cream

3 egg yolks

1/2 cup sugar

1 tsp vanilla

Rum

Scald the cream. Beat the egg yolks and sugar together; combine with the cream and reheat, stirring continually, but do not allow the sauce to boil. Cool slightly, then add the vanilla and rum to taste.
