This is another of those easy, festive cookie recipes that is such a favorite at holiday gatherings. My Snow Balls are fun at Christmas parties, Easter gatherings, birthdays, club meetings, and for guests who just pop in. I have frozen these and pulled them out as needed.

SNOW BALLS

3 ½ cups vanilla wafer crumbs

¼ cup butter, melted

¾ cup powdered sugar, sifted

1 cup pecans, chopped

½ cup Dr. Pepper

Mix vanilla wafer crumbs, melted butter, sifted powdered sugar, chopped pecans, and Dr. Pepper. Pinch a small amount of the mixture off and roll it into a very small ball. Using a fork, dip the balls in icing and then roll in flaked coconut.

ICING

2 cups powdered sugar, sifted

2 teaspoons butter, melted

1/3 cups Dr. Pepper

¼ teaspoon vanilla

Baker’s flaked coconut

Measure sifted powdered sugar into a mixing bowl; add melted butter, Dr. Pepper, and vanilla.

Recipe will make about 6 dozen cookies.

I like to use a little less Dr. Pepper in the icing which makes it thicker.

If you want to freeze these small, beautiful delicacies, you can prepare them as indicated and place them about ½” apart on a cookie sheet or in a pan that will fit in your freezer. After the cookies are frozen, place them in quart or gallon zip-lock bags.
