Potatoes with prunes

I have learnt this recipe from a very old woman who often prepared this wonderful dish when I was at her village. The woman claimed that the recipe contains only healthy ingredients. Potatoes with prunes is a non standard recipe which is very delicious. It serves 5 and is very easy for preparation. Nothing special only a little bit time. The time for preparing and cooking is about an hour and twenty minutes.


300 gr prunes

1 kg potatoes

150 gr onion

1 table spoon tomato sauce

1 table spoon red pepper

100 gr red tomatoes from a can

50 gr parsley

1 pinch of mint

Salt to taste

100 gr oil

Method of preparation:

The first thing you have to do is to clean and wash the onion. Then you have to cut it finely and to stew it into the oil. Add the tomato sauce, the red pepper and some hot water. Meanwhile peel the potatoes, wash them and cut them into slices. Add the potatoes to the mixture. Wash the prunes and boil them into another pot. When the prunes are ready place them onto the potatoes. Meanwhile prepare the red tomatoes by cutting them finely. Place them onto the prunes and potatoes. Add some salt to taste and continue stewing the dish.  At the end add the finely chopped parsley and the mint. Serve with yoghurt if you prefer. Enjoy it!
