Brazilian Potato Salad

This is one of my favorite things to do with potatoes, and it’;s very easy to make.  You can use any kind of potatoes you like, but keep in mind that they can’;t crumble when boiled, they need to keep its shape.

The recipe is as follows:


  • 10 red potatoes, peeled and cubed.
  • 1/2 cup of mayonnaine.
  • Olive oil and vinegar.
  • Freshly chopped cilanto (or either green herb of your preference).
  • Salt


Boil the potatoes with salt until they are cooked, but not overcooked, you want them to be fully cooked, but not crumbly when you handle it. Let them cool somewhat so they are less likely to break. After they have cooled, put them in a large bowl and pour the mayo on top with some vinegar and olive oil and slowly fold it into the potatoes trying to keep them intact. Taste it and add more of either ingredient to your tasting as well as the cilantro.

  1. You can add the cilantro at the same time that you add everything else if you’;d like.
  2. you can also add some shredded carrots, corn, peas etc.
