Things You’ll Need:
- 1 med zucchini, sliced
- 1/2 red or green pepper, sliced
- 1/2 onion, sliced
- 1 small handful of string beans, chopped
- 1/8 tsp. oregano
- 1/8 tsp. garlic powder
- 1/8 tsp. basil
- 1 3/4 cups tomato sauce
- grated Parmesan or Romano cheese for garnish
- Enough brown rice for 2
Pour all the ingredients; the zucchini, pepper, onion string beans, oregano, garlic powder, basil, tomato sauce into a small heavy saucepan. Cook all ingredients over medium heat for about 30 minutes, or until all ingredients or everything is tender. Stir all ingredients occasionally to prevent scorching.
To serve the Ratatouille correctly, sprinkle on some Romano or Parmesan cheese. Pour everything over brown rice. Plate in bowls or dishes. Best with a red sweet red wine. Some like crushed red pepper sprinkled over the dish.
Serves 1 or 2 as an entree.
