Homemade Cashew Pie

Are you a Cashew lover? Do you love pie? Well, combine these two and you will think you are in Heaven. Buy the cashews when they are on sale and it won’;;t break the bank. You need to start this several hours before serving it because it needs to be cooled for the best taste. This is a great recipe to do for the holidays if you are looking for something other than the traditional desserts everyone is used to.

1 C. Domino light brown sugar, packed

3 T. softened butter

3/4 C. Karo light corn syrup

1 t. real Vanilla extract

 3 large eggs

1 C. chopped salted cashew nuts

1 chilled, unbaked 9-inch pie shell (found in frozen foods section)

Preheat oven to 350 degrees. In a large mixing bowl, use an electric mixer and beat at medium speed the sugar and butter until smooth. Beat in the light corn syrup, vanilla, and eggs. With wooden spoon, stir in the cashew pieces. Pour mixture into unbaked pie shell. Bake for 40 – 50 minutes until done.  Cool completely before serving. Double recipe to make two pies.
