Noodle and Mushroom Salad
A distinctly Chinese style salad a good accompaniment to other drier Chinese dishes on a table.
What you will need:
4 oz or (1OOg) Leeks cut just above the white
9 oz or (250g) Mushrooms any of your favourites
12 oz or (350g) Fine noodles
1 Clove garlic, crushed
½ tablespoon Chopped fresh parsley
½ tablespoon Choppedfresh chives
4 tablespoons (60ml) Tomato puree
2 tablespoons (30ml) Soy sauce light or dark depending on mood!)
1 tablespoon (15ml) Nut oil is best but others will be fine
1 tablespoon (l5ml) Honey
To taste Salt and pepper
1 Salad bowl
Jar or dressing shaker
Cook the fine noodles according to the instructions and allow to cool.
Remove the outside layer of and Shred the white part of the leeks long ways and place in the bowl
Slice the mushrooms and place in the bowl.
Place the noodles in a bowl with the leeks, mushrooms
Add the garlic and herbs.
Put the dressing ingredients in mixing jar or shaker and blend thoroughly.
Add to the salad bowl
Toss the salad in the dressing.
Note:If you prepare this then look out the window and it begins to rain and get chilly don’t just bin it Cook it!
Addgarlic to Wok with the oil heat on a medium flame for a minute to get flavour from garlic. raise flame to high and add leeks, mushrooms, herbs. Make the dressing mixture as per above and throw it in soon after the veg etc. after that add the noodles a few seconds after just to allow reheat and you have an instant stir fry!
