Preparing Chicken salad is fairly easy and I can share a recipe that you will love and at the same time receive many compliments. You will need 6-8 pieces of boneless chicken breast, 1 cup chopped celery, 1 cup mayonnaise, ½ cup sour cream, 1 tablespoon garlic powder, 1 tablespoon salt, 1 teaspoon black pepper, ½ cup diced Spanish onion, 1 tablespoon of Indian relish.
Place chicken pieces in a casserole-baking dish, add about 1 cup of Italian dressing, bake at 350 for 40 minutes, turning the chicken so both sides cook evenly (20 minutes each side). Remove dish from oven allow chicken to cool for about 15 minutes.
Next, you want to take chicken and dice chicken in to small pieces, place in large mixing bowl, you then want to add onions, relish, celery, mayonnaise, sour cream, garlic powder, salt and pepper. Mix all ingredients together well. Place in refrigerator and chill about one hour before serving. You can add fresh parsley or paprika for a final garnish.
You can also add 2 tablespoons of Dijon Mustard or Horseradish to add some extra spice to the Chicken Salad. In addition, you can use chicken breast with bone in and follow the same cooking directions as if you were using boneless. The only difference, you will have to debone chicken from bone and then dice in to small pieces.
Serve with a salad or with bread or roll. Chicken salad tastes great in a Croissant. Enjoy!!
