Difficulty: Easy

Things You’ll Need:
4 cups yellow cornmeal
4 cups boiling hot water (or it may take a little more)
1 tsp. salt
2 tsp. sugar
Bowl of cold water
Skillet or frying pan
Canola oil (enough to fill fry pan half full)

Step 1: Mix yellow cornmeal, salt and sugar.

Step 2: Slowly pour in boiling water. Mix the contents until well-blended. Pour in one cup at a time, until all the mixture is wet and firm. Make into pones (oblong, triangle or round).

Step 3: Pour canola oil in frying pan until it reaches the halfway mark. Heat oil to a light simmer.

Step 4: Wet hands in a bowl with cold water and reshape the pones as needed into round, triangle or oblong shapes. Carefully drop the pones one by one into the hot oil. Brown on all sides. If browning happens too quickly, you may need to lower the heat under the fry pan.

Step 5: Remove the browned pones and place on a paper towel to soak up excess oil.
