Making a killer stuffed flank steak

 Get yourself a nice flank steak with little marbling. Roll it out and add some spices and herbs to your steak. Add those seasoningsmag-glass_10x10.gif that you like, we all have different taste. I like garlic and onion salt, pepper, sweet basil, and a little sage, tarragon, and chili powder. Rub on your flank steak and place in the refrigerator for a couple hours.

 Then for the stuffing I cook up some brown rice in a pan and in a separate pan fry up some bacon. When the bacon is done I then crumble it in small pieces and put on a paper towel so some of the grease will be absorbed.  I then saute mushrooms and onions and add the bacon that is done. Add the rice when done to this mixture, again adding seasonings to flavor. Not much salt through remember you have a lot of salt in the bacon.

 Remove the flank steak from the refrigerator and spread your stuffing on top of the flank steak. Not too much remember you have to roll it up. Tie with a string, preferably cotton every inch or so. Bake at 300 degrees for about an hour. Remove from oven, slice into strips about an inch thick, then I put honey on top of them, and set them under broiler for about 5 more minutes.

  Of course always serve with potatoes and corn, and the drippings make a great base for gravy. Then to top it off do not forget the apple pie and ice cream.
