Things You’ll Need:
- 2 Large Green Chili’s
- 1/2 Tsp Olive oil
- 8 ox Bacon, Chopped
- 4 oz pouch Idahoan four cheese mashed potatoes
Place bacon in a saute pan. Cook med high until done Drain, and let cool. A good tip with the bacon is to use a paper towel and dab away all excess grease.
Preheat oil on med-high and roast chilis in saute pan 1 minute per side until browned. Let cool. Try not to cook them to long it makes their texture change and they are a bit harder to work with that way.
Prepare mashed potatoes as directed on package. Set aside.
Cut peppers lengthwise, gently removing seeds from stem. Lightly grease baking pan.
Place green chili’s in baking pan, skin side down. Fill generously with potatoes. Broil for 4 minutes or until potatoes have browned. Top with bacon. Serve hot.
Another good thing to use as a filling for these Chili’s is Cream cheese.

- You can use any kind of pepper or chili’s you would like to we like em hot so we use the chili’s as seen in the image.
