How to Make Green Chilis Stuffed with Four Cheese potatoes

Things You’ll Need:

  • 2 Large Green Chili’s
  • 1/2 Tsp Olive oil
  • 8 ox Bacon, Chopped
  • 4 oz pouch Idahoan four cheese mashed potatoes

Step 1 

Place bacon in a saute pan. Cook med high until done Drain, and let cool. A good tip with the bacon is to use a paper towel and dab away all excess grease.

Step 2

Preheat oil on med-high and roast chilis in saute pan 1 minute per side until browned. Let cool. Try not to cook them to long it makes their texture change and they are a bit harder to work with that way.

Step 3

Prepare mashed potatoes as directed on package. Set aside.

Step 4

Cut peppers lengthwise, gently removing seeds from stem. Lightly grease baking pan.

Step 5

Place green chili’s in baking pan, skin side down. Fill generously with potatoes. Broil for 4 minutes or until potatoes have browned. Top with bacon. Serve hot.

Step 6

Another good thing to use as a filling for these Chili’s is Cream cheese.

Tips & Warnings

  • You can use any kind of pepper or chili’s you would like to we like em hot so we use the chili’s as seen in the image.
