Raley's To Go Red Chili Chicken Enchiladas

Somewhat of a surprise to me, Raley’s To Go Red Chili Chicken Enchiladas has turned out to be a favorite meal. It was unexpected, but as I have enjoyed the various Raley’s To Go products, this is one I have bought consistently and enjoyed the most, second only to my beloved spaghetti and meatballs dish.

Like all of the meals in this product line, the enchiladas are cooked in the microwave within a few minutes. For standard microwaves, this product is done in 2 1/2 minutes.  I absolutely adore the easy preparation — puncturing the film covering four times and sticking the bowl into the microwave.  It does not get much easier than that.

After a minute of resting time, the meal is easy to eat.  The only part of the food that does not quite work for me is the very end of the enchiladas.  Sometimes the very end of the tortillas are a bit stiff, and I require them to be totally soft in order to enjoy them.  I tend to just cut them away, but sometimes a few more seconds in the microwave takes away the problem.

Otherwise, I just love this product.  Raley’s To Go Red Chili Chicken Enchiladas includes shredded white meat chicken, Monterey Jack and Cheddar cheese in a mild chili sauce.  The flour and corn tortillas provide the shell for the chicken breast with rib meat and cheese blends.  Small olives, which I have never liked but seem to enjoy here, top the enchiladas.  Some green onion is also included in the mix.

The package contains two of the enchiladas, each 320 calories with 14 grams of total fat.

I find the meal to be satisfying and very tasty.  As I said, I do not even heat olives anywhere else, but they are good atop the enchiladas and add a nice extra appeal to them.  I just truly enjoy this product.

So, for me, this is one of the most worthwhile meals in the line.  Easy to prepare, not messy, and it tastes great: what more could you want from a meal that only costs five dollars and is made fresh?
