½ Cup Butter or Margarine
1 Cup Brown Sugar
1 Can Sliced Pineapple
1 Cup Flour
1 Teaspoon Baking Powder
1/8 Teaspoon Salt
3 Eggs, Separated
1 Cup Sugar
Follow these directions for pineapple upside down cake recipe:
Melt the butter or margarine in the microwave or in a pan on top of the stove. Pour the melted butter into a cake pan. Sprinkle the one cup of brown sugar evenly over the melted butter in the cake pan. Open the can of sliced pineapple, and cut the slices into halves. Arrange the pineapple slices on top of the brown sugar in the cake pan.
Blend together the flour, baking powder and salt in a large bowl. In a separate bowl, beat together the egg yolks and sugar. Add the egg yolks and sugar mixture gradually to the flour mixture and mix well. In another separate bowl, beat the egg whites until they are stiff. Gradually add to the flour mixture and mix well. Pour the batter slowly and carefully over the pineapple slices in the cake pan.
Bake in the oven at 375 degrees for about 25 to 35 minutes. After removing the cake pan from the oven, let the cake cool for about fifteen to thirty minutes. Turn the cake pan upside down onto a large plate. The pineapple slices will be on top of the cake surrounded by the sugary glaze formed by the brown sugar and butter during cooking.
