The carrot (scientific name – Daucus carota) grows under the ground.  It belongs to the Umbelliferae family.  Carrot is a thick and fleshy root vegetable which is usually orange in color.  But it is also available in red, purple, yellow and white colors.  A fresh carrot is sweet and has a crisp and crunchy texture.  It is popular all over the world and has been a part of salads, stews, soups, juices, desserts and other dishes from centuries.  

Carrot health benefits:

Carrot is rich in essential nutrents.  It has immense health benefits.  Here are some health benefits of this wonderful vegetable:

  • Beta carotene, which gives carrot its color, gets metabolised in to vitamin A in presence of bile salts in the intestine.  Lack of vitamin A causes poor vision.  Vitamin A improves night vision.  It reduces the risk of macular degeneration by 40 percent.  It is also found to be good for the lungs.  

  • Regular consumption of carrot juice prevents bodily infections.
