Stuffed Jalapenos Grilled

If you are looking for a quick, easy recipe for your next backyard BBQ you will no doubt enjoy serving up some hot, delicious grilled jalapeno peppers. The filling will melt in your mouth. The recipe calls for very few ingredients that are commonly found in most kitchens and can be whisked up in less than 15 minutes.

Stuffed Jalapenos Grilled Recipe

In a medium-sized bowl, mix the following ingredients together for the filling:

  • crushed garlic
  • sun dried tomatoes (not in liquid)
  • fresh, chopped basil
  • cream cheese

Start by blending the cream cheese until it is of a smooth consistency. Then add the other ingredients to your taste. There are no set amounts for the other ingredients and you should use enough cream cheese to fill the amount of jalapeno peppers you will be stuffing. Everyone likes different flavors, but start out with small amounts and keep adding a little garlic, sun dried tomatoes and basil to the cream cheese until it suits your tastebuds.

Soak some toothpicks in water. These will be used to wrap bacon around the jalapeno peppers.

Wash and pat dry the peppers. Then slice the jalapenos in half lengthwise and remove all of the seeds. Lay the peppers on a tray and fill each jalapeno level to the top edge with the filling mixture you have already prepared. Wrap each filled jalapeno with a thick slice of bacon.

Place the jalapenos on the grill over medium heat until the bacon is completely cooked. The filling may ooze a bit while they are grilling.

Serve as an appetizer or as a grilled vegetable side dish. Suggestions for the main meal include, Mexican grilled dishes, hot and spicy stir-frys or seafood. A good ol’ fashioned steak and grilled potatoes also go well with this jalapeno pepper recipe. Try serving homemade cornbread and half cobs of grilled corn seasoned with a little garlic, butter and pepper as well.
