Pre heat oven to 350 degrees.
Grease a 9 or 10 inch tube pan.
For the Streusel you will need:
1-cup light brown sugar
1-cup chopped apples
1-cup sliced almonds, pecans or walnuts (optional)
1/4-cup all-purpose flour
1-teaspoon ground cinnamon
3-tablespoons butter, melted
To prepare streusel;
Combine light brown sugar, chopped apples, choice of nuts, flour, and cinnamon in a medium bowl. Stir in the melted butter. Set aside.
For the cake you will need:
2-cups all-purpose flour
1-teaspoon baking powder
1-teaspoon baking soda
1/2-cup (1-stick) butter, softened
1/2-cup white granulated sugar
1/2-teaspoon vanilla extract
1/3-cup orange juice
In a medium size bowl, combine flour, baking powder and baking soda: mix well. In a large bowl, using an electric mixer on medium speed, beat the softened butter and sugar until light and fluffy. Add eggs one at a time; beat well after adding each one. Add the vanilla. Now, set your mixer on low and alternately beat flour mixture and orange juice into egg mixture. Spoon half of this into the greased tube pan.
Sprinkle with half of the streusel mixture.
Spoon the remainder of the batter over the streusel, spreading it to make an even layer. Using a table knife and kind of swirl the batter to make a marble like pattern.
Bake in oven for 15 minutes. Sprinkle with remaining streusel topping. Return to the oven and bake 30 to 35 minutes or until a toothpick comes out clean. Turn cooled cake out onto a serving plate and invert so streusel is on top. Drizzle glaze over cake.
Make the glaze:
Combine 1/2 cup confectioners sugar and 2-1/2 teaspoons orange juice.
