Whipped Honey Butter And Golden Corn Bread

This recipe would be a great item to bring to a potluck and can be doubled to serve more people, but it is also a great recipe to make for any occasion, even a casual family dinner.  This is my favorite corn bread recipe of all time because it does not have corn in it!  I can not stand kernels of corn in my corn bread.  Having corn free corn bread produces the perfect texture and then you add that whipped honey butter and bam!  Be careful you do not fill up on this and miss out on the rest of your meal, it’s easy to do!  Print out thie bread recipe, it’s a keeper!

Whipped Honey Butter

  • 2 cup honey

  • 1/2 tsp vanilla

  • 1/2 cup butter

  • 2 egg yolks

Bring the butter to room temperature or soften in microwave.  Mix all ingredients in a bowl, meating with a mixer until it doubles in bulk.  Store in an airtight container in the refridgerator.  Serve at room temperature and spread over fresh corn bread.

Aunt Alice’s Golden Corn Bread

  • 1 cup yellow cornmeal

  • 1 cup flour

  • 2 Tbsp sugar

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 1 cup milk

  • 1 egg, beaten

  • 1/4 cup vegetable oil

Preheat oven to 400 degrees.  Grease an 8 inch square baking dish.  Combine dry ingredients in bowl.  In seperate bowl, mix together milk, egg and vegetable oil.  Add to dry ingredients all at once, stirring until blended.  Pour into prepared pan and bake for 20-25 minutes or until goldren brown.  Makes 9-10 servings.  Best if served fresh from the oven.
