Sweet Potato Bran Cookies
1 1/2 cups of bran cereal
1 cup milk
1 cup steamed sweet potatoes
1/2 cup honey (I didn’t add any)
3 tbsp. lemon juice
grated rind from 2 large oranges (I used both lemons and oranges)
3/4 cups of raisins
1 1/4 cup of whole wheat flour
1/4 tsp. salt
1 1/2 tsp. baking powder
1 tsp. baking soda
In a large bowl, pour milk onto cereal and let stand. Mash enough sweet potato with lemon juice to measure 1 cup.
Add potato to the milk and cereal, along with a beaten egg, honey, orange rind and raisins. Mix well.
In a smaller bowl, mix together flour, salt, baking powder and soda.
Mix together with the wet ingredients.
Drop by tablespoon full on a lightly greased cookie pan. Bake in preheated oven at 400 degrees F. for approximately 25 minutes. Let stand 8 – 10 minutes before removing from pan.
These can also be made in muffins. Divide into a greased muffin pan for 12.
I love these low-fat cookies. I found the raisins added enough sweetness so I didn’t add the honey. Cooked sweet potatoes are high in beta-carotene, among other nutrients. This is one way of adding more to your diet.
There’s so many variations of healthy cookies you can make using other vegetables like carrots, cabbage, etc. I love experimenting with different flavours.
