As a working person, I am always on the lookout for quick and easy meals which do not come out of a packet. I find this recipe for rissoles ticks all the boxes for a fast prepared meal which give nutrition beside being filling and very, very tasty. Enjoy
Two tablespoons dried parsley (this is actually more nutritional then fresh parsley)
2 slices moistened bread-very soft without the crust
Pepper and minimal amount of salt –if any
One cup of plain flour.
Place the meat in a deep bowl. Add all the other ingredients one at the time. Mix well, about 2 minutes.
Place in refrigerator for about an hour.
When ready to cook, divide mixture into round balls in whatever size you prefer. Roll into the flour. Flatten the rissoles and place in fraying in which you will have heated 5 tablespoons of pure olive oil. Let fry gently on each side, making sure that rissoles are turned regularly.
As they are ready, place in a baking dish in a single layer. Now open up a jar of readymade sauce, pour it over the rissoles, sprinkle some grated cheese and place in oven at medium heat for about 10 to 15 minutes, or as long as you think it is necessary. Serve with instant mash potatoes or steamed rice.
