Start by preheating your oven to 350 degrees. Grease only the bottom of either 2- 8×4 loaf pans or 1 9×5 loaf pan.
Add the following ingredients to a big mixing bowl:
2 1/2 cups Whole Wheat Flour
1 1/2 cups Very Ripe Bananas, mashed(3-4 medium)
1 1/4 cups packed brown sugar
1 cup raisins/nuts/chocolate chips
2/3 cup plain nonfat yogurt
2 eggs or 1/2 cup fat-free cholesterol-free egg product
1/2 cup vegetable oil or 4 oz cinnamon applesauce
1teapoon baking soda
1teaspoon vanilla extract(the best you have on hand)
-Once combined loosely, pour the batter into the greased pan or pans. Place on the center rack in your preheated oven. The 8 in pans need to bake for 50-60 mins, the 9 inch pan needs to bake for 1hr and 10mins. Wait until a knife comes out clean when stuck in the middle of the loaf. Leave in the pan for ten minutes, loosen the sides of the bread and cool completely on a wire rack. This bread recipe tastes best when served sliced, toasted and coated in cold butter.
I enjoy adding in different combinations. I add in chocolate chips, cranberries and walnuts in the winter or dried pineapple, white chocolate chips and pecans in the summer. You can also place this batter in a cupcake pan and bake for minutes or until golden brown on top and a toothpick comes out clean. Occasionally, I will also melt the same chocolate chips I place in the batter and drizzle the chocolate on top of the muffin so I feel like I am eating something more decadent.
