How to Make Jamaica's National Dish, Ackee And Saltfish.

These are the ingredients needed to make ackee and saltfish also you will be given step by step instructions on creating the dish. Very delicious and can be paired with just about anything.

1 lb. saltfish (codfish)

24 ackees (or 2 tins canned ackees)

1 large onion, chopped

salt and pepper to taste

3 cooking tomatoes diced

1 stalk escallion chopped

1 tbsp. oil

Step 1

Soak codfish overnight. (This will not be necessary to cook it and it will not be trashy, as is the case sometimes, when it is boiled.) Remove skin when soaking, as a lot of the salt is in the skin or alternatively soak for 30-40 minutes place in fresh cold water, boil then drain and repeat. Flake fish then set it aside.

Step 2

Prepare ackees for cooking by removing seeds and pink lining. Boil for 20 minutes in boiling salted water. Drain water from ackees. (In the case you are using canned ackees just drain and stir into saute mixture.)

Step 3

Saute onions, tomatoes and escallion. Then add ackees and saute for about 5 minutes.

Step 4

Add flaked saltfish to mixture, saute briefly for flavours to blend.

Step 5

Serve hot with Johnny Cakes or boiled green bananas.
