THREE CHEESE BROCCOLI BAKE
Preheat oven to 375 degrees
Lightly butter a 2 quart casserole and set aside
You will need the following ingredients: Broccoli florets, Egg noodles, Spaghetti sauce, Italian seasoned breadcrumbs, Cottage cheese, Parmesan cheese (1 cup divided in half) Cheddar cheese, Tomatoes, Garlic, Onion, Celery, butter or margarine, Salt and Pepper
Open 1 26oz can or jar of your favorite spaghetti sauce
Cook one pkg. egg noodles until just tender, drain and rinse with water and allow to drain while you prepare your vegetable and cheese mixture.
Steam to just tender
1 10oz pkg. frozen or 1 1/ 2 cups fresh broccoli florets (chopped)
To this Add
2 Tbsp. butter or margarine melted
1 cup cottage cheese
1/2 cup shredded Parmesan cheese
1/2 cup shredded cheddar cheese
2 large firm tomatoes diced (or 1 15oz can diced tomatoes)
1 clove garlic minced
1 stalk celery chopped
2 Tbsp. finely chopped onion
1/2 tsp. salt
1/4 tsp. ground black pepper
Fold together to blend
In casserole dish divide layer
Noodles, broccoli mixture, spaghetti sauce to
make three layers of each ending with a final layer of sauce.
Top with a layer of Italian seasoned breadcrumbs and sprinkle
with the remaining 1/2 cup parmesan cheese over all.
Cover and bake for 15 to 20 minutes until bubbly. Remove the cover for
the last 7 to 10 minutes baking time to lightly brown the top. Remove from
oven and allow to set seven to ten minutes before serving. Serve with crusty bread and a tossed green salad, chilled grapefruit juice (or your favorite fruit juice). Let’s have apple pie with a scoop of ice cream for dessert.
