How To Make A Coconut Meringue Pie

This is a simple recipe that can be made within 20 to 30 minutes and it is delicious, I’ve made quite a few for me and my family, try it out to see how well you like it.

1 cup of sugar; 1/4 cup of flour; 2 cups of milk; 5 egg yolks beaten; 1-1/2 tsp. of vanilla extract; 2 tbsp of butter; 1 cup of coconut; 1 10 inch deep dish pie shell, baked. 4 egg whites; room temperature. 3 tblsp of sugar.

Combine your cup of sugar and flour in a saucepan, and mix well. Gradually add your milk, making sure you stir until it is well blended. Add your egg yolks, the vanilla and butter. Cook over low heat until it is thickened, always stirring constantly. Next, stir in your coconut, mix thoroughly. Now pour your mixture into your pie shell. Beat egg whites in your mixer bowl until soft peaks have formed. Add, gradually the 3 tbsp. of sugar until stiff peaks have formed. Next, spread your meringue over the filling, making sure you seal the edge. Lastly, sprinkle the top of your pie with the additional coconut that is left, if you like. Bake at 350 degrees until your peaks are lightly browned. This is a refreshing light pie that is good anytime of the year.
