How to Make a Tortilla Chicken Soup

Ingredients and items needed:

16 ounces of spicy salsa

32 ounces of chicken broth

1 pound of skinless chicken breasts

2 zucchinis

2 carrots

8 corn tortillas

1 cup of Monterrey Jack cheese

1 avocado cut into thin slices

½ cup of cilantro leaves

Pot for soup

Sheet pan


Non stick cooking spray

The following recipe makes for 8 servings and it is great during the autumn and winter months

First thing to do is to slice the chicken breasts, cut the zucchini and the carrots and slice the avocado and also the tortilla strips

Then combine the spicy salsa, the sliced chicken breasts and the chicken broth in the large pot for soup and bring to a boil over high heat, then reduce to low heat and cook for 20 minutes

Then add the sliced zucchini and carrots and cook on low heat for another 15 minutes

Then preheat the oven at 400 Fahrenheit degrees and line the sheet pan with foil and spray it with the non stick cooking spray

Spread the sliced tortilla strips on the sheet pan and bake for 5 minutes

Now in each serving bowl place the tortilla strips, two tablespoons of shredded cheese, 2 slices of avocado and 5 cilantro leaves at the bottom

Pour the soup into the bowl and serve
