VEGETARIAN SLOW COOKER CHILI
We all love the comfort of chili on a chili or cold day, why not try it vegetarian style for a change of pace. This recipe is so simple, and delicious, you will find yourself making it over and over again!!
A very easy recipe for the person on the go! Just add ingredients and forget about it for 4-6 hours, cooking a great pot of chili has never been so easy. Making your chili in the slow cooker gives time for all of the flavors of your added ingredients to go through, giving it that perfected taste.
1 Can of salt free whole tomatoes
1 medium green bell pepper, seeded and chopped
1 can chili beans, rinsed and drained
1/2 package (12 ounces) fat-free soy crumbles
1 tablespoon minced onion
1 tablespoon olive oil
1 cup chopped avocado
In a 4 quart slow cooker, combine the whole tomatoes, green pepper, chili beans, soy crumble, onion, and olive oil.
Add the chili powder to satisfy your own taste
Cover and cook on high for 4 to 6 hours or on a medium setting for 8 hours ( or until chili is thick)
Once finished, garnish each serving with 1/4 cup of the garnished avocado
SERVES 4, ENJOY!!!!
Double up on the recipe if you have a larger slow cooker or you would like to make for a larger group or even have some to freeze for a later date.
