Make a Healthy Holiday Candle Fruit Salad

This festive salad is great to serve during the holidays and can represent light at Christmas celebrations or Hannukah time.  It is easy to do and looks and tastes great.  This healthy salad will be a conversation starter at your table.

Here is what you will need:

  • 2 ripe but firm bananas

  • lettuce leaves

  • 4 slices of canned pineapple (use the kind “in own juice”)

  • 4 orange gumdrops


  • 4 oz. softened cream cheese

  • 1 cup cool whip

  • 1/4 t. pure vanilla extract

Blend the filling ingredients together with an electric mixer. Put filling in a ziplock bag.  Snip the bottom corner to squeeze out the filling easier than spooning it. Peel the bananas, cut in half crosswise and cut off the tips.  Divide lettuce leaves among 4 salad plates. Place a pineapple ring in th ecenter of each plate.  Fill the center with filling. Stand a banana half upright like a candle with wide bottom down in the center of the pineapple ring.  Top the banana with a gumdrop as the “flame.”  Squeeze a little filling onto the tip of each “candle” to represent wax running down.  Yields:  4 festive salad candles.
