1-2-3 Cookie Recipes

Chocolate Crinkle Cookies

!/2-cup vegetable oil
4-squares unsweetened chocolate, melted (4 oz.)
2-cups all-purpose flour
1-teaspoon salt
2-cups white granulated sugar
2-teaspoons vanilla extract
2-teaspoons baking powder
1-cup confectioners sugar

Step 1…Mix oil, chocolate and granulated sugar. Blend in one egg at a time until well mixed. Add vanilla, stir in flour, baking powder and salt. Chill several hours or overnight. (This is important).

Step 2…Heat oven to 350 degrees.

Step 3…Drop teaspoons of dough into confectioners sugar, roll and shape into balls. Place about 2 inches apart on a greased cookie sheet. Bake for 10 minutes, don’t over bake or the cookies will be very dry.

Ginger Snaps

3/4-cup shortening
1-cup white granulaed sugar
1/4-cup molasses
Blend these ingredients in order as listed. Mix well.
Now add;
2-cups all-purpose flour
1/4-teaspoon salt
2-teaspoon baking soda
1-teaspoon ground cinnamon
1-teaspoon ground cloves
1-teaspoon ground ginger
Blend well and shape into balls about the size of walnuts. Drip in sugar, place on cookie sheet and bake in a 350 degree oven for 15 minutes.

Molasses Cookies

1-cup shortening
1/2-teaspoon salt
3-teaspoons baking soda
2-teaspoons ground ginger
1/2-teaspoon ground cloves
 1-cup white granulated sugar
1-cup molasses
2/3-cold coffee
5-3/4-cups white all-purpose flour
1-large egg
1-teaspoon dry mustard

Step 1…Cream shortening, sugar, egg and molasses.
Step 2…Sift flour, salt and spices.
Step 3…Alternate flour mixture with coffee to cream mixture.
Step 4…Bake 15 minutes in 375 degree oven.

Southern Creme Cookies

1-cup shortening or butter    
1-cup sour cream
1-teaspoon salt
1/2-teaspoon baking soda
2-cups white granulated sugar
2-teaspoons vanilla extract
5-cups all-purpose flour
3-teaspoons baking powder
In a small bowl, blend 1-teaspoon ground cinnamon and 2-tablespoons sugar.

Step 1..Cream shortening and sugar, add eggs, vanilla and sour cream. Add dry ingredients and mix well.
Step 2…Drop by teaspoons onto cookie sheet and flattened slightly. Sprinkle with cinnamon and sugar mix before baking.
Step 3…Bake at 350 degrees for 8 to 10 minutes.

Chocolate Cherry Cookies

      1/2 cup firmly packed light brown sugar
      1/3- cup white granulated sugar
      4- tablespoons butter, softened
      1/4- cup cream cheese, softened
      1- teaspoon vanilla extract
      1- cup all-purpose flour
      1/3- cup cocoa powder
      1/4- teaspoon salt
      1/2- cup milk chocolate chips
      1/2- cup dried cherries, chopped
     Step 1.. Preheat oven to 350 degrees. Spray baking sheet with cooking spray.
      Step 2…Combine brown sugar, granulated sugar, butter, cream cheese and vanilla extract in a large bowl. Beat with an electric mixer set at high speed until creamy.
      Step 3…Sift flour, cocoa and salt together in a small bowl. Add to creamed mixture and mix well. Stir in milk chocolate chips and chopped cherries.
      Step 4…Shape rounded tablespoons into balls. Arrange 2 inches apart onto the baking sheet.
 Bake for 8 minutes. The cookies will be a little puffy and soft to the touch. Will harden nicely when cooled.
 Let cool for 1 minute: and remove to wire rack to cool completely
