Spaghetti is a quick and easy dinner but if you do not have time to cook sauce, there are options to using a jar sauce. Jar sauce is higher in fats, sugars, salt and calories and even the so-called healthier varieties cannot beat homemade. Use your crock pot or slow cooker to make either of these tasty sauces. When you get home from your day, all you need to do is cook your pasta.
Simple mushroom pasta sauce
2 tbs. olive oil
1 large onion, chopped
4-5 cups canned plum tomatoes
1 can (6 oz) tomato paste
2 tsp. basil or 2 tbs. freshly chopped basil
2 tsp. oregano or 2 tbs. freshly chopped oregano
Salt and pepper to taste
1 cup sliced fresh mushrooms
Set the slow cooker on high heat and add the olive oil and onion. Allow the onion to soften. (if you do not have time to sauté the onion, just skip this step)
Turn the heat down to low and add the remaining ingredients.
Cook for 4 to 6 hours. Serve with the pasta of your choice.
Makes 6 servings.
Lentil Spaghetti sauce
1 tbs. olive oil
1 medium onion, chopped
2-3 cloves garlic, minced
2- 15 oz. cans tomato sauce
1 cup chopped fresh plum tomatoes
1 cup water
½ cup lentils
½ tsp. oregano
1 tsp. basil
½ tsp. salt
½ tsp. thyme
Dash red pepper flakes
Set the slow cooker on high heat. Add the oil and sauté onion and garlic until softened.
Turn the heat down to low and add tomato sauce, fresh tomatoes and water.
Wash the lentils well and add to the slow cooker with the remaining ingredients.
Cook for 6 to 7 hours. Serve with your choice of pasta. Makes 6 servings.
