Homemade Burritos, Chips and Salsa, Fried Ice Cream

I haven’t profected the fried ice cream yet..so I like to use Breyer’s Overloaded Fried Ice Cream. It makes a great night for the kids. You can try different ingredients in the burritos. I even made a cheese wrap for my ever finicky daughter, Hannah.

You can buy the mexican rice from the store. I like the micowavable one because it is already done and only takes 90 seconds to ‘nuke. If you want to make your own all you need is brown rice and salsa.

Taco Salad and Fried Apples
The taco salad is easy enough. It is basically the nacho recipe…with a twist. Crunch up tortilla chips into each bowl seperately. This makes it easier to keep any left overs. Microwave the meat mixture by itself in a bowl until warm. I always ask each person what they want in their salad then combine it into their bowl. I also do not melt the cheese.

Make It Healthier
In all honesty, these recipes are not too high in fat. Here are some suggestions to lighten the load. Please, if you have any comments on how else to make them lighter on the waistline, I would love to hear them.
Try using low fat cheese and sour cream.
Make sure to drain and wash the beef after browning to get the excess grease out.
With the apples, try using Splenda instead of the extra sugar.
