Easy Meat Loaf Recipe

Here is an easy and quick to prepare meat loaf recipe. If necessary, this recipe can be prepared ahead of time and refrigerated until cooking time. This meat loaf recipe makes a wonderful meal served with biscuits and a vegetable such as green beans or carrots.

Easy Meat Loaf Recipe


1 Pound Lean Ground Beef

1/2 Cup Onion, Finely Diced

1 Can Sliced Mushrooms, Drained

1/4 Cup Green Pepper, Finely Diced

2 Eggs

3/4 Cup Milk

1 1/2 Cups Italian Style Bread Crumbs

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Parsley

1/4 Cups Ketchup

Preheat your oven to 350 degrees while you prepare the meat loaf. Beat the two eggs in a small bowl. Finely dice the onions and green pepper. In a large bowl mix together the beaten eggs, onions, green pepper, mushrooms, milk, garlic powder, parsley and bread crumbs. Add the lean ground beef and mix well. Shape into a loaf. Place the meat loaf into an ungreased loaf pan.

Bake in the oven for about fifty minutes at 350 degrees. Remove the meat loaf from the oven. Spread the ketchup over the top and return to the oven. Bake the meat loaf another fifteen to twenty minutes or until the meat is fully cooked. (Note: if the meat loaf has been prepared ahead of time and has been refrigerated, baking times will be longer.)

Variations include substituting the lean ground beef with ground turkey, ground pork or finely diced round steak. In addition, tomato sauce may be substituted for the ketchup.
