My wife and I like to make each dish we enjoy our own. This was one of those attempts. It turned out so well it is now a regular meal with us. I am certain many of you out there will enjoy it as much as we do.

1 package Corn Tortillas
2 lbs. ground turkey
2 package taco seasoning
1/2 onion chopped
1 can refried beans
1 can whole kernel corn
1 can chopped chili’s
2 16 oz salsa
4 cups shredded cheese
1 can sliced black olives
Sour cream for garnish

Directions:
Put meat in Dutch oven and fry with onions. Drain grease and return it to the pan. Prepare taco meat as directed on the package. Add refried beans, corn, chili’s then heat thoroughly.

In the bottom of a 9 x 13 pan spray with cooking spray for easy cleanup.

Place corn tortillas on the bottom and cut in half to fight or just overlap 6 of them to cover the bottom.

Spread out 1/3 of the salsa over the top then cover with the meat/bean/corn mixture.

Cover with 1/3 of the cheese.

Repeat until pan is full.

Cover with remaining cheese.

Bake at 350°F for 15 to 25 minutes until brown and bubbly.

Let set for a few and put the black olives on top.

Serve with sour cream as garnish.

Side note:Some stores now carry ground turkey with the taco seasoning already in it. This can save you a step.
