India's Popular Fast Food Ragda Patties, A Simple Chaat That's Very Popular (Beaches of Mumbai) Recipe

Ragda patties is a popular Indian fast food found in Mumbai. It is usually found at places or stalls that offers items such as bhelpuri, panipur, sevpuri.

Ragda patties a popular Indian snack sold on roadsides. This dish is popular all over India, and the North Indian version is called “Aloo tikki chaat”. This dish has two parts- ragda, a dried yellow pea soup and patties, a dish made with boiled potatoes.

Here is a delicious chaat that’s very popular in India, the beaches of mumbai “Ragda Patties”. It has a long process but it tastes good and you will love to eat too.

Ingredients :

For Potato Patties :

– 2 large potatoes

– 1/2 tsp chili powder

– 1/2 tsp chaat masala (optional)

– a pinch of turmeric powder

– 1 chopped small onion

– 1/4 cup maida flour (All purpose flour)

– salt to taste

– vegetable oil for frying

For Ragda :

– 1 1/2 cups white dried peas (white vatana)

– salt to taste

Preparations :

For Patties :

1) Boiled the potatoes, peel and mashed them.

2) Mix all the ingredients except flour and oil in a bowl.

3) Heat the oil in a non-stick pan over medium heat.

4) Make medium size balls and lightly flatten them on your palm to make patties.

5) Dip the patties in the flour one by one and cook (fry) both the sides until golden brown.

For Ragda :

1) Soaked overnight the white dried peas and add little salt to it.

2) Wash and pressure cook the peas in water till they are soft.

3) Add salt according to taste.

Other Ingredients :

For Green Chutney :

– 1 cup chopped fresh coriander leaves

– 1 1/2 cup mint leaves (pudhina)

– 5 to 6 green chillies

– little jaggery

– little tamarind

– salt to taste

For Sweet Chutney (Dates Tamarind Chutney) :

– 1/4 cup grated jaggery (gur)

– 2 cups deseeded dates (Khajur)

– 1/4 cup deseeded tamarind

– 1 tbs chili powder

– a pinch of hing

– salt to taste

Preparation :

For Green Chutney :

– Grind all the ingredients together with little water to a smooth paste.

For Sweet Chutney :

1) Take jaggery and 1/4 cup of water in a pan and cook till jaggery is dissolved.

2) Blend the dates and tamarind in the mixer. Add this mixture (dates and tamarind) to the boiling jaggery and allow it to cook for 7 to 10 minutes till the chutney becomes thick.

3) Cool and strain the chutney.

4) Store refrigerated. Use as required or make one day before this chutney and packed in a tight container and keep it.

To Serve Ragda Patties :

– Take the plate, put two patties in the plate.

– Pour the ragda on the patties.

– Add sweet chutney and green chutney on top of it.

– Sprinkle chopped onions and coriander leaves.

– Sprinkle sev on top and serve immediately.
