Seasoned Fried Shrimp

For those of us with busy lives we want to be able to provide a healthy dinner for our family but we don’t want to spend a lot of time making it.  Shrimp is something that is very good when it comes to quick meal making.  Here is a new way to make shrimp that is spicy and crunchy. 

2 dozen large shrimp peeled

1/2 teaspoon of salt

1/4 teaspoon ground pepper

2 cups all purpose flour

2 teaspoons cayenne pepper

1 teaspoon dried scallions

1 clove diced garlic

Pearnut oil for frying

1 cup of buttermilk

2 teaspoons dijon mustard

1 additional tablespoon salt

1 additional tablespoon ground black pepper

Place the shrimp in a bowl and season with 1/2 teaspoon of salt and 1/4 teaspoon of ground pepper.  Add the garlic and stir to coat the shrimp with the garlic. 

In a seperate bowl add the flour, the rest of the salt and pepper and the cayenne pepper.  Stir the mixture to combine the ingredients.

In a large frying pan  or a deep fryer heat the oil until very hot. 

Pour the buttermilk and add the mustard to the bowl with the shrimp. Gently stir to coat the shrimp. Take each piece of shrimp and place it in the flour mixture and coat the shrimp.  Use a spoon or your fingers what ever you are most comfortable with.  Then using tongs place each piece of shrimp gently in to the oil. You will need to do this in batches, make sure to not over crowd the pan.  Cook the shrimp until the coating is golden brown. 

Place the cooked shrimp on a plate or platter covered with paper towels to absorb some of the oil. Let cool until safe to eat and serve.
