Chicken Tostadas and Salsa
If you like Mexican food then you will love these. They only take 20 minutes to prepare. They are savory and delicious and make a great meal for lunch or dinner that the whole family will enjoy. This recipe will serve 4, but if you would like to serve 8 just double the ingredients. They make a very colorful addition to any table. It is a rich and hearty filling meal. It will taste like you are dining at a Mexican restaurant. These tostadas are better because they are homemade. You may be creative by adding some of your own ingredients and you may use mild or spicy salsa. Enjoy!
1/2 cup of olive oil
4 flour tortillas
3 cups of lettuce, shredded
1 avocado peeled and sliced
1 can of refried beans
1/2 cup of shallot, sliced
2 tomatoes, chopped
2 cups of chicken breasts, cooked and shredded
1 cup of cheddar cheese shredded
1 can of black olives, drained and pitted
1 cup of sour cream
1 jar of salsa
1. In a skillet, heat the olive oil and fry each tortilla for 1 minute on each side.
2. Place the lettuce on the center of each tortilla. Arrange all the other ingredients on each tortilla and top with the chicken, sour cream, and cheese. Spoon the salsa over each tortilla.
3. Serve and enjoy.
