How to Make Dahi Kadi, A Simple Curry That's Very Popular in India

In India , the word curd is also known as yogurt. Shrikhand, a popular dessert, in India is made from drained yogurt. It is found in different flavors, two of which are famous as sweet yogurt and sour yogurt. In many parts of India sour yogurt is also used as a hair conditioner by women.

In Nepal, yogurt is served both as an appetizer or dessert. Yogurt is nutritionally rich in protein and calcium. To prepare this recipe dahi (yogurt) is added so this dish is called as dahi kadi. Here I am going to share my easy and quickest dahi kadi curry. After the dish is made you will surely notice its nice color. It’s yummy. Enjoy cooking!!!

Ingredients

For Pakora:
– 1/ 2 cup besan (gram flour)
– water ( to make smooth batter)
– 1 tbs ginger paste
– 1 tbs garlic paste
– 1 chopped onion
– 1 chopped green chillies
– pinch of turmeric powder
– 1/2 tbs azwain (optional)
– salt to taste
– Oil for frying

For Kadi:
– 2 cups yogurt ( or buttermilk)
1/2 cup besan (gram flour)
– 2 to 3 pieces of kokam (optional)
– pinch of turmeric powder
– 1/2 tbs mustard seeds
-1/2 tbs cumin seeds
– coriander for garnish
– few curry leaves
– 1 tbs red chili powder
– 4 to 5 dry red chillies
– salt to taste
– 2 to 3 tbs oil

Preparation
PAKORA :
1) In a bowl mix besan and all the ingredients.

2) Add little water to make a thick batter.

3) Make small balls and fry them in the oil to make pakora.

4) Deep fry them until they turn in golden color and crispy. Take them out on a paper towel. And keep them aside.

Kadi preparation :
1) Blend yogurt, double the amount of water, pinch of turmeric powder, ginger-garlic paste, kokam, red chili powder, salt, besan. Mix well make sure that there should be no lumps. It should look like a buttermilk mixture with besan in it. Simmer it to medium heat and constantly stir after every 5 minutes each. Repeat the process till it is fully cooked. It may take around 30 minutes.

2) Take pan and add 2 to 3 tbs oil, curry leaves, mustard seeds, cumin seeds and dry red chillies.

3) And add this red chili on the top of the kadi.

4) After it’s done garnish with coriander leaves.

5) Serve this dish with hot rice or chapati.
