Something simple but tasty to pile on top of a culinary disaster and hopefully rescue it. Alternatively it can be sprinkled on just about anything hot or cold just to add a bit of interest.
All you need: 2 hot, red chillies, 2 gloves of garlic, olive oil, bread crumbs.
Finely chop two chillies and two gloves of garlic.
Fry the chilli and garlic in 3 tablespoons of olive oil on a highish heat.
After two minutes add the bread crumbs, a teaspoon at a time, stirring them in with the chilli and garlic. Don’t stop stirring or the stuff will burn.
When the bread has soaked up the oil either stop adding breadcrumbs or add more oil and then keep going with the breadcrumbs until you have the amount you require. The aim is to get the bread crumbs to be browned and crisp but not burnt. A twist on it is to add very finely chopped anchovies or bacon.
You can sprinkle this on top of whatever you want to give it a bit more bite, interest or taste, or just to camouflage a very boring meal. My friends now expect me always to have it sprinkled on top of pasta.
