How to Make Grilled Garlic Rosemary Potatoes
2 cedar planks
2 pounds of Yukon potatoes
5 tablespoons of olive oil
3 chopped garlic cloves
¼ cup of chopped rosemary
1 tablespoon of oregano
4 sliced red onions
A pinch of salt
A pinch of ground pepper
These potatoes are great as a side dish or alone and it takes about thirty minutes to prepare and cook plus an hour to soak, and the recipe makes for six servings:
The first thing to do is to soak the cedar planks in hot water for an hour.
Then cut the potatoes into 6 wedges and place them on a microwave safe dish, and cover with a plastic wrap and microwave for 6 minutes
Then combine the wedges, the olive oil, garlic cloves, rosemary, the oregano and onion rings in a bowl and toss to coat.
Season the potatoes with salt and the ground pepper
Heat charcoal grill at 400 degrees Fahrenheit and place cedar plank on grill, close the cover and heat for five minutes until plank begins to smoke
Arrange the potato wedges, overlapping, on the hot cedar plank and top with onion rings
Place cedar plank on the indirect, cold side of the grill.
Close the grill and cook for 15 minutes or until the potatoes are tender.
