Red pepper rolls

This recipe serves 4. The time for preparation is 30 minutes+ 30 minutes for the marinade. The red pepper rolls could be served as a main dish or as additional dish to meat or fish. They could be used even as appetizers.


6 baked red peppers

250 smashed potatoes

2 cloves of garlic smashed

3 table spoons olive oil

150 gr mushrooms dry from the marinade

50 gr olives

2 table spoons mayonnaise

1 tea spoon lemon juice

Fresh parsley

Salt to taste

Method of preparation:

You have to cut the baked red peppers along their length in four. Place them into the marinade which is prepared from the olive oil, the lemon juice, the smashed garlic and the salt. Leave the peppers to stay into the marinade for about half an hour. Meanwhile mix the smashed potatoes and the mayonnaise, the cut mushrooms which are dry from the marinade. Dry the peppers, onto each part of them put the prepared mixture and roll the pepper. Place the rolls into a serving plate and pour with the marinade. Sprinkle the finely chopped parsley. Enjoy!
