Onion and Tomato Soup
This is a very simple and easy to make soup. Very hearty and healthy also. Tomatoes contain lycopene and are very nutritious and high in antioxidants. This soup only takes twenty minutes to prepare. Simmering time is twenty minutes. Broiling time is three minutes. It is excellent as a main dish. It goes well served with salads or any meat. A very colorful addition to any table. This soup is wonderful to take on a take along lunch. Guests will really enjoy it. It will store well in the fridge and may be easily reheated in the microwave. This soup takes less time to make than most soups.
Three cups of thinly sliced onions
One clove garlic, minced
1/2 cup of butter
1 can of chicken broth
1 cup of water
1 can of tomato juice
2 tablespoons of lemon juice
1/2 teaspoon of parsley
2 cups of shredded Mozzerella cheese
1. Saute onions and garlic in butter in a large saucepan.
2. Stir in chicken broth, water, tomato juice, lemon juice and parsley.
3. Bring to a boil. Reduce heat and simmer uncovered for twenty minutes.
4. Serve in soup bowls, sprinkle each bowl with a half of cup of Mozzerella cheese. Add crackers. Enjoy!
