How to Prepare Grilled Mahi Mahi

The ingredients you will need are:  lemon juice, olive oil, oregano, garlic, lemon peel, and of course fresh mahi mahi.  The recipe serves four people.

Pick out four fresh fillets or trim them yourself, about one quart a pound or a little more for each person.  Once the fish is filleted to size rinse them well, then be certain remove any excess water by patting them with a brown towel or your choice paper towel.

Place the mahi mahi in a bowl.  Mix in one half a cup of lemon juice, one third a cup of olive oil, three tablespoons of oregano, one teaspoon of garlic (minced) and one teaspoon of lemon peel.

Turn the fish over several times to make certain they are well coated.  Place the fish and marinade in the refrigerator for 30 minutes.  You may leave it in longer to suit your taste or if you would like to prepare the marinade at an earlier time for a quick fix meal later.

Once you are ready to prepare your meal, fire up the grill.  Use tongs to remove the mahi mahi fish fillets from the marinade and place them on a coated grill rack.  Brush the fillets with the marinade and salt for flavor.  Brush the fillets again after about five minutes.  Next, flip the fillets and brush the remaining marinade on the other side.  Grill approximately another five minutes, or until done.

Add a side of green beans or squash and a glass of wine, and you’ve got yourself a great gourmet meal in minutes.
