Seafood Recipes/shrimp Scampi/and Crab Salad

These are simple and easy to make seafood recipes. They go great with lunch or dinner. Each recipe will make four servings.

Shrimp Scampi

Makes four servings. Prep time 30 minutes. Bake time 20 minutes. Oven temp 30 minutes.

Ingredients:

2 pounds of jumbo, raw deveined shrimp

2 tablespoons of lemon juice

1 teaspoon of lemon and pepper seasoning

1/2 teaspoon of salt

1 shallot, chopped

4 teaspoons of parsley

1/2 teaspoon of garlic powder

3 tablespoons of butter

2 ounces of longhorn cheese, sliced

Directions:

1. Placed the shrimp in a greased baking dish. Pour lemon juice over the shrimp. Sprinkle with lemon and pepper and salt.

2. Combine shallot, parsley and garlic powder. Sprinkle over shrimp. Add the butter and cheese on top.

3. Bake at 350 degrees F for 20 minutes. Serve hot.

Crab Salad

Makes four servings. Prep time twenty minutes.

Ingredients:

1 pack of frozen snow crab, thawed

1 head if iceberg lettuce, shredded

Slice bell pepper for garnishment

Dressing:

1 cup of mayonnaise

1/2 cup of whipping cream

1/2 cup of chili sauce

1/2 cup of bell pepper, chopped

1/2 teaspoon of salt

1/2 cup of shallot, sliced

Directions:

1. Prepare and mix all ingredients for dressing.

2. Place lettuce on four salad plates.

3. Place crab on top of lettuce.

4. Pour dressing over crab.

5. Garnish with sliced bell pepper. Serve and enjoy!.
