2 to 3 pounds of bonless pork steak about 3/4″ thick ( you can substitute the pork steak with regular pork chops)
6 fresh carrots peeled and chopped in 2″ pieces
6 med. size potatoes peeled and sliced in quarters
1 can of cream of mushroom soup
2 teaspoons of italian seasoning
1 cup of water
salt and pepper to taste
In a large dutch oven add the carrots and water and allow the carrots to cook over a medium heat for 30 minutes. (this allows the carrots to cook a bit since carrots take longer to cook than most vegatables.)
After the carrots have simmeres for 30 minutes add the potatoes, cream of mushroom soup, pork steaks and italian seasoning and salt and pepper to taste. The pork steaks may be added as a whole steak or if you prefer you can slice it into 1″ cubes, your preference.
Bring this to a boil and then let it simmer for about an hour or until the carrots and potatoes are good and tender and the pork is cooked. Stir occasionally to ensure that the veggies and mushroom gravy does not stick to the pan.
There are many different ways this dish can be cooked you can subsitute the pork with chicken or beef as well as you can use different veggies such as squash or whole mushrooms, just pick your favorite meat and veggies and give it a try you can’t go wrong.
