How to Make Vegetable Shrimp Rolls

What you will need

1 1/2 teaspoons of olive oil
3/4 cup of corn kernels
1/4 cup of real mayonnaise
1 pound of peeled, deveined, cleaned and chopped shrimp
1/4 cup of pesto
2 tablespoons of fresh squeezed lemon juice
1/2 of a red bell pepper cut into small cubes
5 scallions sliced thinly
Hot dog buns (your choice of wheat or white buns.)

First, in a medium bowl stir in mayo, pesto and fresh lemon juice.  Allow this mixture to sit for 10 minutes so it has time to thicken.

Next, add corn, red bell peppers and scallions.  Toss this mix so it is well blended together.  Season the mix with salt and pepper to your liking.  If you like garlic, you can sprinkle some fresh cut up cloves up garlic or use garlic seasoning.

In a skillet, heat olive oil on low to medium heat.  Add the shrimp and cook until warm.  This process should take about 3 minutes.  Add corn mixture and allow the shrimp mix to cool in the refrigerator.

Place the desired amount of shrimp mix into a hot dog bug and enjoy cold.  These shrimp rolls are a huge hit on a warm summer day with a glass of fresh squeezed orange juice.
