There are many variations of beef casserole, but this one is my own recipe and not out of a book. It is very tasty and is also very low fat, low calorie, and there is no added fat, butter or oil. When buying the beef I usually get the cheaper cuts such as stewing or braising beef, but this will probably depend on where you live, just bear in mind that you will be cooking it for about two hours. If for some reason you can’t get creamed horse radish sauce you can use English mustard instead. This beef casserole recipe is reasonably healthy and probably under four hundred calories for each person. If you are on a diet and trying to lose weight this could be an ideal dish for getting those pounds off.
Beef Casserole and Creamed Horseradish
1lb stewing or braising beef, 1 large carrot, 1 large onion,1 cup of frozen peas, 1 dessertspoon of creamed horseradish sauce, 1 tablespoon soy sauce, ¾ pint vegetable stock.
Make the vegetable stock and put to one side. Cut the beef into cubes of about one inch and remove any fat, wash the carrot and slice into thin pieces then peel the onion and cut into small pieces.
Method — Serves 2
Place the beef, carrot, onion, peas, horseradish sauce, soy sauce and vegetable stock into a medium size casserole dish with a lid. Put in the oven at 170c for approximately one and three quarter hours or until cooked. After one hour give it a stir up and if desired put a touch more stock or hot water, depending on how you like it.
You might like to have the beef casserole with some mashed or boiled potatoes. To keep the calories down only have about six ounces each person, potato is roughly twenty two calories per oz raw. Vegetables are another option, most of them are about half the calories of potato and on the whole they are more nutritious and contain lots of fiber. Another healthy way of getting plenty of roughage in your diet is to leave the skins on vegetables and fruit where possible.
