Mixed Vegetable Souffle’

Quite an addition to any table is Mixed Vegetable Souffle’. This is great for serving at lunch time or dinner time. I is a ery easy dish to prepare and it fits the budget perfect because it does not cost much top make. It is less time consuming than most dishes. It is the perfect dish for the hurried meal. It is also very nutritious as it contains many vitamins and minerals. This dish is high in nutritional value.


One half cuup of butter

One half cup of flour ( all purpose)

One Tablespoon of cornstarch

One half teaspoon of onion powder

Two Tablespons of seasoned salt

One half teaspoon of black pepper

One half teaspoon of nutmeg

Two cups of milk

Four eggs, separated

Two cans of mixed vegetables, drained

Two Tablespoons of bread crumbs


1. In a medium saucepan melt the butter. Add flour, cornstarch, and seasonings. Remove from heat. Stir in milk. Cook and stir until thick.

2. Beat egg whites until firm. Beat egg yolks well. Mix these ingredients in the saucepan. Stir in vegetables and mix well.

3. Pour into a casserole dish and sprinkle bread crumbs on top.Bake at 350 degree heat until golden brown for about forty minutes. Enjoy!

Thisdish is excellent for vegetarians as it contains no meat and is packed with vitamins, minerals, and protein.
