Recipe – Beef With Black Bean Sauce, Green Bell Peppers And Ginger

This dish is one of my favourites and is very similar to the one you would eat in most Chinese restaurants. The black bean sauce gives it a delicious flavour along with the ginger and garlic and goes well with boiled rice because the main dish is quite rich and it is nice to have something plain as an accompaniment. My wife and I often have this dish at our local Chinese restaurant and even when we are on holiday abroad. 

One of the great things about eating this type of meal is, it is very low fat and low calorie which is perfect if you are on a diet and trying to lose weight. The dish below is only 230 calories per person so it will not eat into your daily calorie plan and leave you some extra calories to have another low calorie treat. 

Beef with Black Bean Sauce, Green Peppers and Ginger

Ingredients

8 oz lean rump beef steak, 1 large green bell pepper, 4 medium size scallions, 2 oz piece of root ginger, 4 cloves of garlic, ¼ pint chicken stock from 2 cubes, 1 tablespoon soy sauce, 2 tablespoons black bean sauce.   Total Calories 460

Preparation

Cut the beef steak into thin strips 1 ½ inches long. Remove the core and cut the pepper into 1 inch squares. Trim the scallions and cut into 2 inch pieces then quarter them long ways. Peel and thinly slice the ginger into 1 inch pieces. Peel and slice the garlic cloves. Prepare the stock. 

Method – Serves 2

Put the beef steak strips into a non stick wok or similar type pan and cook on a medium heat for a few minutes until brown, remove the beef and put to one side. Put the peppers in the pan and cook until starting to go soft, add the scallions, root ginger, garlic, chicken stock, soy sauce, black bean sauce and the beef. Mix together and cook for 5 to 10 minutes or until you reach the desired consistency. I like my sauce to be fairly thick but you may prefer it slightly thinner.                                                                                                                                                        

Total Calories Per Person 230

 Serve with 1 oz rice (dry weight) boiled 100 calories per person; this recipe is approximately 330 calories each which includes the rice. If you would prefer 2 oz rice you are still only looking at 430 calories each and there is no fat added to the dish at all. 

I hope you try this recipe and enjoy it as much as my wife and I. We have found that this recipe tastes as near to the Chinese restaurant equivalent as you will get.
