Recipe – Ground Beef Curry Over Baked Potato

This ground beef curry over baked potato recipe is great tasting and very satisfying too. Apart from the baked potatoes this is a one pan meal which makes life a little bit easier in the kitchen. When cooking the potatoes if you prefer to cook them in the microwave that’s fine, even boiled potatoes will go well with this recipe. 

Another good thing about this recipe is there are no added fats or oils which make it an excellent choice if you are on a low fat diet. My wife and I used this recipe many times when we were on a diet and still enjoy it now.  

Beef Curry and Baked Potato

Ingredients

8 oz ground beef, 1 medium size onion, 1 medium size carrot, 6 green beans, ½ cup peas, 2 x 6 oz baking potatoes, ½  pint chicken stock, 1 dessertspoon curry powder to preference, 1 teaspoon dried coriander, 2 cloves of fresh garlic. 

Preparation

Wash the potatoes, dry and prick them with a fork a few times, Peel and chop the onion, wash the carrot and chop, cut the green beans into small pieces, make up the chicken stock, peel and chop the garlic. 

Method – Serves 2

Place the potatoes in the oven and cook for approximately 75 minutes at 180c or until cooked. 

Whilst the potatoes are cooking, put the ground beef and the garlic into a non stick pan and cook on a medium heat for a few minutes until brown, remove the beef and set to one side. Place the onions, carrot, green beans, peas into the pan and cook until starting to go soft, adding a spoonful of water now and then if required, but no fat. Return the ground beef to the pan along with the chicken stock, coriander and curry powder. Cook for approximately 15 minutes keeping an eye on it and if it loses too much liquid just add a touch of boiling water to get your desired consistency. 

When everything is cooked place the potatoes on a plate, cut in half and spoon the curry mixture over the top. The curry powder in this recipe is really a matter of personal taste, some people like it hot others don’t, so use whatever one you prefer. I personally use a mild balti curry powder which is very nice; it has lots of flavour with just a hint of heat.
