Prepare the pie crust by lining a 9-inch pie plate with the pastry. Fold under any extra pastry and crimp the edge as desired. Another option is to just buy a ready to use 9-inch pie crust.
For the filling, in a mixing bowl combine the pumpkin, sugar, cinnamon, ginger, and nutmeg. Add the eggs, then beat lightly with a rotary beater or fork just until combined. Gradually stir in the evaporated milk and whole milk and then mix well. Now carefully pour the filling into the pie crust.
Preheat the oven to 375 degrees. To keep the pie crust edges from getting hard, you can cover them with aluminum foil. Bake at 375 degrees for 25 minutes. Now remove the foil from the pie edges and bake for another 25 minutes. Remove the pie from the oven and let cool. See, it was “easy as pie”.
