Living on a budget means hamburger meat is probably somewhere on your menu. Need a moderately easy new recipe for hamburger? This article will teach you to make yummy hamburger egg rolls at home
Things you’ll need
Deep fat fryer or skillet to fry the egg rolls
Vegetable oil or canola oil
Egg roll wrappers
1 egg – used to glue the egg rolls together for frying
1 lb. hamburger meat
Seasonings – salt, pepper, season salt, etc. or what you prefer
¼ cup onion, chopped small
¼ cup celery, chopped small
1 clove garlic, minced
small piece of ginger root, grated
¼ cup carrots, small chop or julienne
½ head of Bok Choy, small chop
3 mushrooms, small chop
Add any other vegetables you like, just be sure to add the ones that need the most cook time after the onions, celery and garlic so everything gets done at the same time.
1 quarter-size piece of ginger root, grated (use this sparingly)
1 can of bean sprouts, rinsed and drained
Brown hamburger meat on medium heat until all the pink is gone, adding seasoning as you cook. However, not too much seasoning as you can add more later. While hamburger is cooking, start chopping your vegetables in the order given. Drain the grease from the hamburger meat and continue cooking.
After draining your grease, add the onions, celery and garlic to the hamburger. Keep chopping and adding the ingredients except for the sprouts. The sprouts are added 2 minutes before everything is done. Add sprouts, cook a few more minutes and season to taste. Remove from heat to cool. There should be very little moisture in your hamburger mixture. It will make your egg roll wrapper hard to fold.
Break egg into a small bowl and scramble with a fork. Set near your prep station. Start heating your fryer to 375 degrees. Open egg roll wrappers. Lay out the wrapper diagonally in front of you, like you are folding an envelope. Coat the top triangle with egg, using the bottom of your fork to spread like glue. Put two heaping tablespoons of meat mixture in the middle, keeping it away from the sides. Fold the left side of the egg roll (see photo) towards the middle, then the right side. Tuck everything in and carefully roll up tightly towards the top triangle coated with the egg. And there is your first egg roll. Fry until golden brown, about 2-4 minutes depending on your grease temperature. Now you have just 11 egg rolls to go. Simply roll them like burritos, the more you do, the better you get. This recipe makes approximately 12 egg rolls. Serve with soy sauce or sweet and sour sauce, Yummy!

OK, I just can’t waste anything so I decided to chop up an apple, laid it in the middle of my extra egg roll wrapper, added a tad of butter, sugar and cinnamon, folded it, and fried it up. Wow, it turned out fantastic! I wonder what else you could do with egg roll wrappers. Hmmmm
